Welcome to Belize! This is my fourth year working in this amazing country: do everything from building a chicken coop to help a small village become self sustaining, building outhouses for a school, a library for a school, throwing a carnival for 200+ Belizean kids, and even last year we had a hotdog cookout for an entire village. Every year we also give away hundreds of food bags with rice, beans, chicken seasoning, flower, and toiletry products.
Today we were invited to a long term friend’s wedding, and the group of us were able to be the guests of honor! Mezziah and Alburt invited the team leaders to be the maid of honor and best man, knowing them for 10+ years, and the entire time for 4+ years.
They had a traditional Christian wedding outside at an elder’s house. Now, be aware the entire time kids, chickens and dogs were running amuck. ^_^ But it was lovely. We were surprised to find out they also had planned a traditional Belizean feast of stewed chicken, rice and beans! If you ever get a chance to taste a bit of this, you’ll never go for plain backed chicken again.
Even how they make it is traditional. Outside, they have the ‘grill’ for the chicken, while in a specially built hut they have the supplies needed to cook the rice, beans, and chicken with the spices. The rice is wrapped and cooked in banana leaves, and typically eaten with hands. Delicious!
